Komali Red and Green Chilaquiles


Introduction

Komali Red and Green Chilaquiles are a classic Mexican dish, perfect for breakfast or brunch. Crispy corn chips coated in red and green salsas are finished with fresh toppings, creating a comforting and flavorful meal. Served with Komali corn tortillas, they are both traditional and satisfying.

Ingredients

Serves: 4

  • Corn tortilla chips
  • Tomatoes
  • Serrano chile
  • Tomatillos
  • White onion
  • Garlic
  • Vegetable oil
  • Salt
  • Mexican crema
  • Fresh cheese
  • Red onion, sliced
  • Fresh cilantro
  • Komali corn tortillas

Instructions

  1. For the red salsa, cook the tomatoes, garlic, and part of the onion until softened; blend with salt.
  2. For the green salsa, cook the tomatillos, serrano chile, and garlic; blend with salt.
  3. Heat oil in a large skillet and add the tortilla chips.
  4. Add the red or green salsa, or both, and gently toss until coated but still crisp.
  5. Serve immediately and top with crema, fresh cheese, red onion, and cilantro.
  6. Serve with Komali corn tortillas.
