- Poblano chiles
- Cheese for stuffing

Instructions
- Roast the poblano chiles, place them in a bag to steam, then peel and remove seeds.
- Stuff the chiles with cheese and set aside.
- Beat the egg whites until stiff peaks form, then gently fold in the yolks.
- Lightly coat the chiles with flour, dip them in the egg batter, and fry in hot oil until golden.
- For the sauce, cook the tomatoes, onion, and garlic; blend with salt and pepper.
- Heat the sauce in a skillet, add the battered chiles, and simmer briefly.
- Serve hot with Komali corn tortillas.
