Komali Chiles Capones


Introduction

Komali Chiles Capones are a traditional Mexican dish full of flavor and texture. Stuffed and battered chiles are fried until golden and then simmered in a savory tomato sauce. Served with Komali corn tortillas, they make a comforting and satisfying main dish.

Ingredients

Serves: 4

  • Poblano chiles
  • Cheese for stuffing
  • Eggs
  • Flour
  • Vegetable oil
  • Tomatoes
  • White onion
  • Garlic
  • Salt
  • Pepper
  • Komali corn tortillas

Instructions

  1. Roast the poblano chiles, place them in a bag to steam, then peel and remove seeds.
  2. Stuff the chiles with cheese and set aside.
  3. Beat the egg whites until stiff peaks form, then gently fold in the yolks.
  4. Lightly coat the chiles with flour, dip them in the egg batter, and fry in hot oil until golden.
  5. For the sauce, cook the tomatoes, onion, and garlic; blend with salt and pepper.
  6. Heat the sauce in a skillet, add the battered chiles, and simmer briefly.
  7. Serve hot with Komali corn tortillas.
