- Pork, thinly sliced
- Achiote paste
- Guajillo chiles
- Garlic
- Vinegar
- Orange juice
- Salt
- Pepper
- Fresh pineapple, finely chopped
- White onion, chopped
- Fresh cilantro, chopped
- Komali corn tortillas
Instructions
- Soak the guajillo chiles and blend them with achiote, garlic, vinegar, orange juice, salt, and pepper until smooth.
- Marinate the pork with the mixture and refrigerate for at least 2 hours.
- Cook the pork on a hot skillet or griddle until fully cooked and lightly browned.
- Finely chop the meat and mix it with pineapple.
- Warm the Komali corn tortillas.
- Serve the pork on the tortillas and top with onion and cilantro.
