Komali Al Pastor Tacos (Traditional Style)


Introduction

Komali Al Pastor Tacos are a true icon of Mexican cuisine. Made with marinated pork cooked until juicy and lightly caramelized, then served on Komali corn tortillas, these tacos offer bold flavor and a perfect balance of meat, pineapple, and fresh toppings.

Ingredients

  • Pork, thinly sliced
  • Achiote paste
  • Guajillo chiles
  • Garlic
  • Vinegar
  • Orange juice
  • Salt
  • Pepper
  • Fresh pineapple, finely chopped
  • White onion, chopped
  • Fresh cilantro, chopped
  • Komali corn tortillas

Instructions

  1. Soak the guajillo chiles and blend them with achiote, garlic, vinegar, orange juice, salt, and pepper until smooth.
  2. Marinate the pork with the mixture and refrigerate for at least 2 hours.
  3. Cook the pork on a hot skillet or griddle until fully cooked and lightly browned.
  4. Finely chop the meat and mix it with pineapple.
  5. Warm the Komali corn tortillas.
  6. Serve the pork on the tortillas and top with onion and cilantro.
